Basically-Tabbouleh Quinoa Salad
If you want to make this actually tabbouleh, make it with bulgur wheat, but Deepa tends to have quinoa in the pantry more often. This keeps well and can be eaten hot or cold.
Serves 2-4.

Instructions
- Wash and rinse quinoa.
- Cook quinoa in broth in whatever way you prefer (Deepa cooks it uncovered in the microwave on high for 10 minutes, then covers and lets it sit for 10 more minutes).
- Stir in all other ingredients and serve.
