Basically-Tabbouleh Quinoa Salad

If you want to make this actually tabbouleh, make it with bulgur wheat, but Deepa tends to have quinoa in the pantry more often. This keeps well and can be eaten hot or cold.

Serves 2-4.

Ingredients
  • 1 cup quinoa
  • 1 ¾ cups veggie broth, chicken broth, or water
  • 1 15 oz. can of garbanzo beans, drained
  • 2 cloves garlic, minced
  • 3 tablespoons lemon or lime juice
  • 4 tablespoons olive oil
  • ½ teaspoon ground cumin
  • 1 tomato, chopped
  • chopped fresh parsley (or cilantro) to garnish
Instructions
  1. Wash and rinse quinoa.
  2. Cook quinoa in broth in whatever way you prefer (Deepa cooks it uncovered in the microwave on high for 10 minutes, then covers and lets it sit for 10 more minutes).
  3. Stir in all other ingredients and serve.
